Auto-entrepreneur, SARL or CESU?

I really want to make steps forward with my idea to be an events organiser and wedding planner, but am totally at a loss of the best structure. I have close friends who have a large chambres d’hotes business. They have already catered for quite a few weddings, conferences and the such and now want to add themed weekend packages, e.g. cycling breaks, adrenaline adventure packages, gastronomy etc.

They have talked about setting this up and paying me through the CESU. What charges would this occur them and me?  Another option is that I set myself up and then use their place as the base for accomodations and the events. If I was auto-entrepreneur and made say 10000 for a wedding, would I have to pay 23 % charges on this amount, even though I’d only be keeping a small piece of this for me, the rest would be paid out to accommodation, reception, caterers etc. Can see that wouldn’t be viable, or is there another way?

Am pretty sure the EI wouldn’t be an option as don’t want huge upfront charges when may not earn a penny for months on end. I need a pay as you go method but based on my profit not all the income from clients.
