Business structures for multiple activities in France?

My wife and I have bought an estate in France, comprising of a gite, mas and an olive grove. We intend to let the gite and to grow olives for oil production. At some point we would also open up rooms in the gite for guests. We would also like to offer table d’hote with alcohol to gite and mas guests.
What business structure or structures in France would you suggest for such a combination of commercial and agricultural activities? I am drawn towards micro-entrepreneur for holiday letting, and cotisant solidaire for agriculture. I believe the first would grant us access to the health system and the second would allow us to deduct TVA. Would this be a sensible move, or should I combine the two activities with a societe?
