Change regime due to the auto-entrepreneur time limit?

I have read about the time limit of 1 to 5 years that may be imposed on auto-entrepreneurs. We are into our fourth year and will surely have to change regimes so was just wondering:

  1. Under the Real Simplifie would we have to be registered for and charge TVA?
  2. Other than SARL and Reel Simplifie are there any other options for our gites business?
  3. I under stand that social contributions are charged on net profit, what percentage would be have to pay?
