Initial steps in business registration in France?

I wish to register a business or two, here in France. One of the businesses will be routine home and garden services, decluttering, home staging in preparation for sale and some upcycling (doing up old furniture), cutting grass and hedges etc, security visits on unattended gites. All of this would be possibly classed as unskilled.

The other business is renting out holiday accomodation in my own two bedroom gite. I would like to know what type of business I register under, auto-entrepreneur etc., or should I register the home and garden services in my name and should my wife register the gite in her name. Where do we go, how do we go about it?
