Is auto-entrepreneur the right business for a restaurant manager?

I previously worked for the owner of a restaurant in France as an employee. The business has been leased out and new owners are in place. The new owners wish me to stay on as manager with me looking after my own taxes etc. which I am happy to do. Am I right in thinking that the best way for me to do this is by becoming an auto-entrepreneur? This is an exciting new position as I will have complete charge of the day to day running of the restaurant. I have 36 years experience in hospitality, as manager, chef de cuisine and licencee.
