Is this how conjoint collaborateur works in France?

We visited the chambre de commerce et d’industrie (CCI) last year when we were investigating the legal requirements of starting a small business in France. We were told that if my wife were to register as a conjoint collaborateur we would each have to pay the 14% of turnover in cotisations. They also said to register in one name (mine) and carry on with my wife not being officially involved in the business - although of course I could not possibly do this on my own. They seemed to suggest that this was normal, and that she could be registered as beneficiary of my social security payments.

We could also then each earn up to the threshold for income tax, making it unlikely that we would need to pay any tax - as we are not likely to make more than 10,000 euros after the 70/30 allowance is taken into account. I am utterly confused, and only trying to do the right thing.
