Legal structure for chambre d’hotes in France

Creating the correct business structure for a Chambre d’hote in 23460 the Creuse. My partner Debbie and I are moving over full time on Saturday 6th April to open a Chambre d’hote. The property will eventually need investment, new central heating, more bedrooms etc. Initially, we thought micro enterprise for the simplicity, but as we are not married only one of us could be registered unless we enter into a pacs.

  1. If we register as a business other than micro enterprise would we be allowed to deduct renovation costs new heating upgrade fosse septique etc?
  2. We have heard that grants are available does this make any difference as to the regime we opt for ? could we start as micro enterprise then change in say a years time if necessary ? or visa versa?
  3. I also receive a small income £10,000 per year from property income in the UK
