Legal structure for manufacturing company?

I’m a UK national that started UK limited company. I moved to Canada and opened an office. The Canadian Incorporated company is a wholly owned subsidiary of the UK company. In Canada I met my now wife a Canadian national. Both of us work full time through the Canadian company for the UK company. Process; The Canadian company only has the one customer the UK company. We then invoice the UK company every 3 months. This payment covers our wages, overheads and my wife’s social security payments to the Canadian Inland Revenue. We both currently file Canadian tax returns. I also receive a small UK Directors salary and maintain my UK national insurance contributions. We work from home.

My wife, 2 boys and I moved to France and continue to work full time for the Canadian company and will complete 2012/13 Canadian tax returns. However we’re hoping to stay here permanently. The idea to close the Canadian company and set up a French company, effectively a copy of the Canadian company. All sales and profits are solely processed and declared in the UK. Which business structure should we use?
