Passeport Talent Business Registration Questions

I am currently in France on an APS which is the temporary residency permit for students who finished a masters degree in France. My wife is also in France on a long stay visitors visa.

I will be starting a business in France and plan on applying for the passeport talent, business creator. I want the passeport talent as it is for 4 years, renewable, and allows my wife to also receive the same status, rather than a 1-year entrepreneur/profession liberale option. I will be doing this on my own, rather than going through one of the incubators so the requirements below are what applies.
Requirements here.

I have a few questions as I want to get this right the first time around:

1. They ask for “Supporting documents fixed by order of the Minister of Immigration and the Minister for the Economy to assess the real and serious nature of this economic project. ” I take this as meaning a business plan and market study? Anything else that I’m missing there? I didn’t find real clarification about this online by myself. If you go through an incubator, they issue a letter from DIRECCTE affirming the real and serious nature of the project. Any idea what exactly they are looking for and could you point me to some french versions of a business plan and market study (and other materials the prefecture might want) that would be an acceptable format for the prefecture/direccte? Any other pointers would also be helpful. This is a digital services business.

2. Resources equivalent to SMIC. I believe I should just have to show that I have an amount equivalent to a year of SMIC in my personal (French?) bank account but I will also be applying with my wife. Do I need 2 x SMIC or some other multiple?

3. For the business registration, it looks like SASU or EURL would be best for me as I would be the sole owner. I think I would want to pay myself with dividends, rather than take a salary as it would defer tax and social charges. I want to delay taking money out of the business until it is profitable and I can also wait for several years before taking any money out. I would like to understand the health care impact of this, though, ie, what regime would I be under for SASU and EURL. This is a services company so there would be minimal depreciation. Are the annual accounting fees largely equivalent between the two forms?

4. Justification of an investment of at least 30000 euros in the business. I assume I register the SASU or EURL, open a business bank account, deposit 30000 euros into the business account, and then provide this balance to the prefecture. What specific document do I need to request from the bank that will function as an official verification of the balance?

5. This: “Vérification du respect de la réglementation en vigueur dans le domaine d’activité.” This is extremely vague to me and I do not understand exactly what they would want from me to prove that.
