Paying hourly workers as a SARL?

I have just started a textile design company under the SARL format. I produce the design, have it printed onto fabric which is then marketed either by the metre or is made into accessories such as cushions, curtains, tea-towels etc. I intend to have these accessories made up by independent people who are handy with a sewing machine working from home on an hourly basis.
I am currently looking into the best way of paying these people - am I right in thinking that the TESE system would be the best, or do you know of another system which would be better suited? Also, what sort of insurance will I need to take out to cover this sort of activity?
