Should we set up independantly as a couple or consider going into partnership?

We have lived permanantly in France for over two years. We have a business in UK for over 20 years which is now run by a manager but from which we still get an income. We are taxed in the UK. We are both in our late 50’s. Our son is an auto-intrepeneur in France. We live on the same farm as him, we own it he works it. Two questions:
1. We are considering now letting a gite on our property, and letting our small vinyard to our neighbour, both of which will bring in small income. Should we set up independantly as a couple or consider going into partnership with our son.
2. His fiancee is considering working with him, should he change his status?
