Starting a business that cures, smokes and sells bacon

Hi there

I’m looking to set up a small business selling bacon in France. I’ve cured and smoked bacon for a few years now in the UK, however have no formal qualifications (went on a 1 day smoking course in UK a few years back) and haven’t worked as a butcher or anything like that in the past. Initial research makes it seem like the French are quite stringent on who can set up this type of business, but can you confirm if this is correct? And if it is, what would be your recommendations on the easiest/quickest way to satisfy the authorities stipulations around setting up this type of business. I’ve lived in France since February this year.
