structure for running a hotel in France

We started a micro-brewery (EIRL) in 2012 and will be moving (us and brewery) to live in and take over an 18 room hotel at the end of the year. We plan to run the hotel with family members (couple plus 2 adult children) and probably 1 full-time member of staff. The Chambre de Metiers have advised that a SARL would be the best structure (keeping the brewery separate as doing otherwise might create problems for some grant funding we received) but I’d be grateful if you could advise what the pro’s and con’s are of this, and if there are any alternatives? They also suggested that the brewery pay the hotel/owners a rent. many thanks
